Peanut Butter Puffs

I'm always on the look out for healthy recipes!
Instagram is perfect for these quick and easy recipes and I'm following a lot of accounts that provide these.

I wanted to share this particular one that I found that sounded lovely. It's healthy and one that I thought my boys would also eat (if they eat some, calories are shared!)
It was also one that I could get Freddie involved in and he absolutely loves cooking with Mummy!
Quick, easy and fun - completely family friendly :)

Peanut Butter Puffs

1 1/2 cup of Puffed Rice
1/2 cup of Peanut Butter
1/4 Honey
1tsp Vanilla Essence

1.  Place Peanut Butter, Honey and Vanilla Essence in a bowl over warm water and mix together
2. Place your Puffed Rice in a separate bowl and add the mixed together Peanut Butter, Honey and Vanilla Essence into the Puffed Rice 
3. Place baking paper to outline a dish
4. Pile evenly the mix into the dish and place in the fridge to chill for a minimum of 2 hours

This recipe is basically a healthy version of Rice Krispies cakes, which taste lovely!
I doubled up this mix as I didn't have a small enough dish to produce substantial puffs with only 1 mix. I also topped the Puffs with writing pens - Just to allow Freddie to put a personal touch to them :)

I don't expect these will be hanging around for very long!
