Our Cakes for Sports Day

Last week I shared a post with you regarding spending time with Freddie making Cakes for Sports Day - only it ended up getting cancelled. Catch up here.

For Freddie's Sports Day all Parents were asked to bring in biscuits and cakes for refreshments.
Of course the boys and I were well up for contributing! (only this time, hoping it wasn't going to end up being cancelled again!) Thankfully it didn't get cancelled and it was a lovely morning, Catch up on it here.

Last week I made some Chocolate Banana Muffins.
These were so yummy!

I made these from a basic Muffin recipe and just substituted some of the flour for cocoa powder and added 2 bananas in the mix.

110g Butter
75g White Sugar
2 tbsps Brown Sugar
2 eggs
125g plain flour
50g cocoa powder
1tbsp baking powder
1 tsp vanilla extract
60ml water
2 small bananas

Oven 190 Celsius       25 Minutes Cooktime

1. Whisk Sugars, Egg and Butter together.
2. Sift Flour, Cocoa Powder and Baking Powder - Fold in.
3. Add Vanilla Extract, Water and Bananas.
4. Whisk all together and spoon into cases.




But as you know it got cancelled so ended up having them hanging around the house. Thankfully the boys scoffed them down before I could be tempted! I only had one out of the 12..  (I'd rather they ate the calories than me!)

For Sports Day Mark 2 I was going to make these again but Chris suggested making Peanut Butter Cupcakes, so I looked on the internet for a recipe and came across this one.
Oh my! These are delicious and SO easy to make!
Making them again I would add more peanut butter to the recipe as they didn't seen to be that peanut butter-y flavour. I used muffin cases (made 15!) as I didn't have any cupcake ones.. and topped with a Banana Chip.
I would totally make them again.




 I took most of them to the Sports Day, but a few of the "not looking extremely pretty" ones to my mums as we visited after Sports Day. Some of them did spill over, therefore looking a bit untidy but they tasted just as gorgeous!
